When to harvest parsnips

The short answer

Parsnips are ready once the leaves start to die down, from autumn through winter. RHS waits until after the first heavy frost, which intensifies their sweetness. Garden Organic digs them as needed from autumn and says frost often improves the flavour, so you don't have to wait if you want them sooner.

Parsnips sit in the ground for most of a year and then wait for you. The only real risks at harvest are snapping the long roots, and not being able to get them out of frozen soil when you want them.

When it's ready in the UK

The leaves dying back is the signal, and parsnips can then be lifted through the winter and stored until spring of the following year. Vercro's catalogue gives September to February for the harvest.

Months from Vercro's crop catalogue, the data the Vercro app plans with. It allows about 17 to 26 weeks from sowing to the first harvest. Weather, variety and where you garden move every one of these.

66 UK gardeners had recorded parsnip in Vercro by 19 September 2026. What Vercro gardens are growing.

How to tell it's ready

  • The leaves start to die down.(RHS)
  • After the first heavy frost, if you can wait: frost intensifies their sweetness.(RHS)

How to harvest

  1. Mark the rows with canes or labels before the leaves disappear, or you won’t find them in winter.(RHS)
  2. Ease the long roots out intact with a garden fork.(RHS)
  3. Twist the leaves off rather than cutting them.(Garden Organic)

What moves the date

  • Frost. It sweetens the roots, but frozen ground can make them difficult to lift.(RHS)
  • A cold spell coming. Lift a few extra in November, or cover the ground with straw as insulation, so you can still dig in a freeze.(RHS)

If you leave it too long

  • They keep in the ground. Parsnips can be stored until spring of the following year.(RHS)
  • Split roots come from erratic growth, not from waiting too long to lift.(RHS)

After picking

  • Leave them where they are and lift as needed through winter, with straw over the row in hard weather.(RHS, RHS)

Where the sources differ

Two good sources, two answers. We show both rather than picking the convenient one.

Keep a record of what each bed gave

Log what you pick, and how much, bed by bed. Vercro keeps the record, so next year you know what worked where, and Today shows what your crops need next.

Where this comes from

Crop windows, growing times and plant families come from Vercro's own curated crop catalogue, the same data the Vercro app uses. Where a published source says something different, we show both rather than choosing the convenient one. Reviewed 19 September 2026.
