When is sweetcorn ready to pick?

The short answer

Once the silks at the end of a cob turn brown, peel back a little of the husk and pierce a kernel with your fingernail. Creamy juice means it is ready; watery juice means not yet; paste-like means you have left it too long. Most UK sweetcorn is ready in late summer, and it is sweetest eaten straight after picking.

Sweetcorn gives no outward sign that it is ripe except the silks, and the silks only tell you when to start checking. The fingernail test tells you the rest, in about five seconds per cob.

When it's ready in the UK

Late summer, depending on the variety: there are early, mid-season and late-ripening types. In cold places RHS recommends an early variety, because a late one may not have time to ripen in a cool summer. Cobs are unlikely to ripen at all out of full sun.

Months from Vercro's crop catalogue, the data the Vercro app plans with. It allows about 10 to 13 weeks from sowing to the first harvest. Weather, variety and where you garden move every one of these.

91 UK gardeners had recorded sweetcorn in Vercro by 19 September 2026. What Vercro gardens are growing.

How to tell it's ready

  • The silks have started to turn brown. That is the cue to test, not a guarantee.(RHS)
  • Creamy juice from a pierced kernel: the cob is ready.(RHS)
  • Watery juice: not yet ripe.(RHS)

How to harvest

  1. Twist the ripe cob and pull it sharply from the stem.(RHS)
  2. Eat it quickly. Once picked, sweetcorn loses sweetness as its sugars turn to starch.(RHS)

What moves the date

  • Early, mid-season or late variety.(RHS)
  • Supersweet types hold their sugar for longer after picking.(RHS)
  • Full sun. Without it, cobs are unlikely to ripen.(RHS)
  • A late start in a cool summer may leave cobs without time to ripen.(RHS)

If you leave it too long

  • Paste-like juice means the cob is over-mature.(RHS)

After picking

  • Straight to the kitchen. The sugar starts turning to starch as soon as the cob is picked, and Garden Organic says to serve it quickly as the sweetness fades.(RHS, Garden Organic)

Keep a record of what each bed gave

Log what you pick, and how much, bed by bed. Vercro keeps the record, so next year you know what worked where, and Today shows what your crops need next.

Where this comes from

Crop windows, growing times and plant families come from Vercro's own curated crop catalogue, the same data the Vercro app uses. Where a published source says something different, we show both rather than choosing the convenient one. Reviewed 19 September 2026.
